Serves 4
 
Ingredients:
700g/Approx 1& half pounds of Minced Beef
1 large Onion (any of your choice)
1 clove of Garlic
150g/Approx 5oz Frozen Peas
250g/Approx 9oz Carrots
1tbsp Sunflower Oil or any of your choice
1 can of tomatoes - any that you would prefer
1tsp Paprika
1tsp Dried Oregano or Marjoram
Salt & Black Pepper
Pinch of Cayenne Pepper or a dash of Tabasco Sauce or if
preferred double the amount of Paprika
 
 
Method:
Slice the carrots thinly.  Peel the onion & garlic chop finely.Heat the oil in a large pan & fry the onion and garlic for approx 5 minutes or until translucent.
Add the carrots and cook for a further 5 minutes.
Add the mince and carry on cooking and stirring until it browns.
Season with Salt & Black Pepper
Add the spices and herbs.
Then add the tomatoes along with the juice from the can and cook on a medium heat for about 10 mins or until the sauce thickens.
Before the end of cooking add the peas and cook for approx 5 minutes.
 
 
Kenyans serve this dish with bread that's made with maize & sorghum (a grain that is turned into flour).However you can either serve it with crusty bread or rice/pasta or some plain boiled potatoes.
 
If you have any mince left over it can be stirred through pasta the
next day.
